標題[單字] cream of the crop是菁英，why?

在英文電子報上看到
cream of the crop是 best of the best 菁英的意思
可是實在很難聯想
crop 上面一陀cream，為什麼是菁英的意思呢？
懇請指點喔~ ^_^
