degrade通常都是指蛋白質上的胺基酸有被切,lost掉的情況
尤其是發生在 teminal 是 coil 時,有時候"尾巴"會被切,變短
但功能通常都還在
而 denature 是指蛋白質的三級結構被破壞,因而失去作用
像在不對的 pH 值,或是不對的salt時
