degrade通常都是指蛋白质上的胺基酸有被切,lost掉的情况
尤其是发生在 teminal 是 coil 时,有时候"尾巴"会被切,变短
但功能通常都还在
而 denature 是指蛋白质的三级结构被破坏,因而失去作用
像在不对的 pH 值,或是不对的salt时
