今天要介绍的是最基本的芬兰菜 可以在Market Square的路边摊里吃到 (~8Euro)
做法跟大家煎的鲑鱼排很像 但不同的是配料简单 只有salt、新鲜dill及rose pepper
鱼排洗净後 撒点盐在表面 以中大火煎两面 然後转小火至鱼排熟了
最後装盘时 摆上切碎的新鲜时萝 及红胡椒粒
因为除了煎嫩的鱼排之外 味道来自於dill及rose pepper 建议用新鲜的

Pink or Rose Pepper:
This is not a true pepper but is a dried berry from a small mastic tree
related to the rose bush and found on the French Island of Reuni on in the
Indian Ocean. (These are also commonly referred to as "Red Peppercorns" in
trade and in many cookbooks.) These are used whole in nouveau cuisine dishes
or mixed with other varieties for general use. The flavor is most similar to
that of Black Pepper, but milder and more acidic with a hint of sweetness.
