标题[文法] 词典里头用逗号连接consisted与varied?

大家好，请问一下
1.在Longman Idioms Dictionary的SPIRIT条目中，看到这样的例句：
Albert's diet consisted of microwave meals, varied by cooking in a disgusting
frying pan when the spirit moved him.
里头consisted和varied都是动词，却只用逗号连接，是否有误呢？
如果是分词，就变成：
Albert's diet consisted of microwave meals which were varied by cooking in a
disgusting frying pan when the spirit moved him.
那我想再问，类似的结构：
Depending on where you ate, small orders of fries could vary by 110 calories
and by 320 milligrams of sodium.
为何同样是vary後面加by，前面那句用被动语态，後面那句则是主动语态呢？
想厘清这两句话的by的意思。

He's always turning up late with some fantastic excuse, expecting me to
swallow it whole!
这句话是否可以理解成这样：
He's always turning up late with some fantastic excuse, (and is) expecting me
to swallow it whole!
