我认为用 since she entered 是没问题的。
可以用下面这个时间轴来看：

Entered college 句子描述的事情 present
他对 astrology 感兴趣是在 entered college （过去的事情）到那句话之间，
现在感不感兴趣不知道，所以用 had been，
然後 entered college 是过去的事情，
在这个句子里面并不是一个从某时间到另一个时间一直发生的过程，
所以我认为那位老师的改法是正确的。
