标题Re: [问题] 请问有人对印度香料奶茶有研究吗?

你真的问对人了, Masala 其实就是香料的意思, 没有特别指哪些配方,
至於, masala tea, 我自己试过, 主要就是要有大吉岭茶叶, 新鲜牛奶,
还有一些香料, 老姜 & 肉桂是ㄧ定要的, 再加上黑胡椒粒 (千万别用
磨过的黑胡椒粉替代), 丁香, 豆蔻, 月桂叶... 等, 煮法如下 :
1. 把所有香料放到水里煮 ( 我都煮个十几分钟, 把香料的味道煮出来 )
2. 再加入茶叶煮个 5 分钟
3. 最後加入冰牛奶煮到热 (不可以煮到滚, 牛奶沸腾会有蛋白质固化问题)
( 酌量加糖, 香料要加多少.. 其实也随意 )
香料何处买 :
SOGO 忠孝馆的超市有ㄧ排小磨坊的调味料, 可以找到所有的香料
工具 :
买个牛奶锅, 煮完比较好倒奶茶, 最好有滤网, 但我估计喜欢动手
煮的人可能不多, 红茶其实也不ㄧ定要大吉岭, 毕竟大吉岭也是有好有坏,
有红茶就够了
另外附上, 我印度朋友 (道地印度人) 给我的食谱, 每个家庭加的香料
都略有差异

TEA MASALA making procedure:
The tea masal is usually prepared in bulk, or this can be baught
from any of the India shop. We need 5 things to prepare it.
The ingredients are:
50 gms of dried ginger which we call saunth.
25 gms green cardamom.
10 gms black pepper.
10 gms clove.
10 gms cinnamon stick.
Just dry all these things in sun for one day and then
you can grind it and keep it in an airtight container.
MASALA Tea making procedure:
The ratio of water and milk for one cup of tea should be half-half
or milk on the slightly greater side but not less than water.
First put required water in pot & put 1 spoon of Tea (for 1 cup) and
1 spoon of Masala (spice prepared above) also sugar can be added as per test,
we normally put 1 spoon for a cup.
Boil the water with above ingredients.
Once water is boiled put milk on boiling water and everything together boil again.
Once Tea is boiled it is ready for serving :-)
