Kirk does mean the opposite: that the predator part of the human race is going away, and going to fade out in a thousand years. Kirk says "as predators go," sarcastically. He's being mildly "ironic" here by acknowledging that others might think of humans as "predators," but that he doesn't. Another example of Kirk being ironic or sarcastic about the nature of humanity to prove a point comes in the episode "A Taste of Armageddon."
