标题[继承] 请问遗产赠与给亲戚以外者

事实经过：
您好, 因为全家想一起出国玩, 担心万一发生意外, 不希望将包括保险金在内的
遗产留给亲戚, 想捐赠给慈善机构, 部份给特定人 (女朋友).
问题：
请问这种情形该如何订定遗嘱, 或有其它的方式可以处理吗, 谢谢.
先感谢各位帮 小弟/小妹 解惑或提出建议，如内容尚有不足，盼请提出需补充之处。
