标题[请益] 两个句子中字的问题

1.We can no longer afford to consider water a virtually free resource of which
we can use as much as we like in any way we want.
这句话里的 "of" 是从那里而来的呢??
怎会出现of? which 应该是代替前方的 resource当 use 的受格没错
但请问一下这边的of要怎样解释呢?
2.French readers, young and old, already have plenty of free options from
which to choose.
上面这一句是从99指考的阅读测验中看到的
里面的which是关代吗?为何要用到which?
options to choose from 就好了不是吗?
