关於蛋白质的生太键(那两个字还真的打不出来咧...)
基本上就是因为它的bond energy高达100kcal/mol
远比沸水煮30分钟能提供的热量高
所以断不了.
而UV ray算一算好像可以达到95kcal之类的数字...
所以说照久一点就可以破坏蛋白质了
