Since your I-140 is self-petitioned, you can change jobs as long as you continue to be engaged in the same field of endeavor as that which serves as the basis for your I-140 petition, and your work continues to be of national importance. We generally recommend that clients remain engaged in the same field as that which serves as the basis for the I-140 and that the work continues to be of national importance for at least 6 months after they receive their green card.
